Jam Jar Raspberry Jalapeno Vinaigrette - 52 Simple but Next Level Dishes

Just as good as it looks...

I should talk a little about the jalapeno... Don;t be scared.  The spice is mild (no seeds, and especially none of the white inner ribs) when all you use is the green part.  You need to use your knife skills and mince this as fine as you can.  You do a simmer of the sweet raspberries with the finely mince pepper.  This helps spread the mild heat throughout the dressing.  No HOT spots, just a lingering bit of seasoning though out the jar.  Heat and Sweet, a fantastic combination... Do not be afraid of the pepper.

Making your own Jam Jar salad dressing becomes an addictive way of life.  You get to control the flavors (don't like the idea of Jalapeno, leave it out), you get to control the Sugar and Salt (FAR less in this recipe than in any store bought dressing)...

And it's fun... Skip down and read cooking direction number 5.  A fun way to get the kids involved (although you should change it to shake like the dickens (whatever that means... But I digress)).

And of course... EASY EASY EASY...

Just like your Mom or Grammy did, take a clean, empty jar and add a few ingredients, screw on the (tight-fitting) lid, and then shake it till ya make it. About a minute or less of rigorous shaking generally yields a smooth and rich dressing.

It couldn't be easier, and thanks to the raspberry Jam (oh yeah, you are making jam before you make the dressing... Try a bit on a piece of toast before adding the oil), it's creamy and stable. As a bonus, any leftovers are conveniently ready to be stored for the next salad.

OK... Here's what I did...


Jam Jar Raspberry Jalapeno Vinaigrette


Ingredients
  • 2 Cups Frozen raspberries (or Fresh)
  • Juice of 1 Lemon
  • 1 TBS Sugar
  • 1 Pinch of Salt
  • 1 Jalapeno Pepper, Seeds and white membrane removed, Minced as fine as you can get
  • 1 Cup Extra Virgin olive Oil
  • a Pinch each, Salt and Pepper
Cooking Directions
  1. Over Medium low heat, in a small non-stick Saute Pan, add the raspberries, Lemon Juice, Sugar, Salt and minced Jalapeno
  2. Allow the raspberries to thaw, simmer and in a few minutes begin to dissolve into a liquid.
  3. Continue at a low simmer for at least 20 minutes until everything is liquid, stirring occasionally.
  4. While the Jam is still warm, Combine with the Olive Oil, add a pinch of Pepper and another pinch of Salt in a 2 Cups Mason Jar, seal tightly
  5. Shake like Hell for @30 Seconds
  6. Serve over raw vegetables, salad, baked potatoes... Use your imagination and ENJOY!

You get the idea. These recipes are very simple, take very little time but will set you apart as a better cook...
