Italian Grilled Cheese (Mozzarella in Corrozza)

Today's recipe is one of those that on the surface seems simple... and it is.  But the tastes are much more complex and satisfying than you would imagine.

Mozzarella in Corrozza is very common in Italy.  Makes a great after school snack, or can be served as an Antipasto for a meal.

It may looks\ like an Italian grilled cheese.  But in fact the taste is much closer to a bread pudding.  The egg soaked bread is indeed toasted, but only on one side.  Leaving the egg soaked center to become almost creamy custard tasting.  Crispy crunchy outside, sweet, creamy custard tasting center and the stringy melting mozzarella.

Not your granny's grilled cheese (unless your granny comes from the old country)!

This sandwich got DEVOURED.  It is incredibly delicious.


Here's what I did...


Italian Grilled Cheese
(Mozzarella in Corrozza)


Ingredients
  • 2 OZ Mozzarella Cheese, sliced per sandwich
  • 2 Slices Soft Fresh made Bread per Sandwich
  • 1 Large Egg per Sandwich
  • 2 TBS Half and Half per Sandwich
  • Salt and pepper to taste
  • small pinch Red Pepper Flakes to Taste
  • Olive Oil As needed for a thin layer for frying
  • Flour for Dredging
Cooking Directions
  1. Top 1 Slice of bread with enough mozzarella to cover  Sprinkle a small pinch of red pepper flakes to taste.  Top that with a second slice of bread
  2. Whisk the eggs with the Half and Half in a small casserole dish and sprinkle with salt and pepper.
  3. Add the flour to a separate casserole dish. Dust the sandwiches in the flour, and then dip both sides into the egg mixture.
  4. Heat about 3 tablespoons olive oil in a large nonstick pan. Add the sandwiches to the pan and fry on both sizes until golden and crisp, about 10 minutes. The mozzarella should be completely melted and very "stringy" when the sandwich is eaten. Slice the sandwiches in half to make 2 triangles.
  5. Allow to rest for 5 minutes for the cheese to slightly set
  6. Serve warm and ENJOY!

Like I said, this was a wonderful surprise!  Don't bother calling it a grilled cheese... So much more!
